Puffed Lotus Seeds and Root salad (v)

It’s a play on a popular Indian street snack, Bhel. Here, I’m combining 17 different ingredients for a bowl full of sweet, savory, salty and spicy! You’ll see sprouted lentils, spring vegetables, classic Indian chutneys and more.

Course 3 

Coconut Curry Leaf Risotto, Vadouvan dusted Duck Breast (Veg OPTION: Vadouvan roasted Cauliflower), Coconut Gremolata.

Pistachio Cheesecake, Dark Cocoa Shortbread crust, Saffron Whipped Cream, Raw Honeycomb, Dill fronds, Makrut Lime Leaves, roasted Almonds.
